Ingredients

  • 4 pork cutlets
  • Salt
  • Pepper (freshly ground)
  • olive oil (for brushing)
  • 1 kg potatoes
  • 250 ml milk (or cream)
  • 80 g Butter
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • rosemary (for garnish)
  • thyme (for garnish)

Instructions

    Peel, wash, and cut the potatoes into small pieces; boil in salted water for about 20 minutes. Drain and mash hot through a potato masher.

    Heat milk (or cream) with 80 g butter and whisk into the mashed potatoes until light; season with salt, pepper, and nutmeg; keep warm.

    Brush the pork cutlets with olive oil and season with salt and pepper. Grill each side for 4–5 minutes over high heat, brushing with oil repeatedly.

    Plate the pork cutlets atop the mashed potatoes and garnish with rosemary and thyme.
