Ingredients

  • 4 pork chops
  • Salt
  • Pepper
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 500 g fresh spinach
  • 250 g savoy cabbage
  • 1 tbsp butter
  • nutmeg

Instructions

    Rinse, wash, and drain the spinach in a pot over high heat covered until it wilts. Transfer to a colander and let drain. Clean, wash, and drain the savoy cabbage. Remove thick leaf strips and tear the leaves into bite‑size pieces. Blanch in boiling salted water for 3 minutes, then drain.

    Peel the garlic cloves and slice them. Pat the pork chops dry and season with pepper. Brown the garlic in hot olive oil until golden brown, remove and set aside. Then sear the pork chops on both sides, add the garlic on top, turn off the heat, cover, and let the meat rest.

    Meanwhile, sauté the spinach and savoy cabbage in a non‑stick pan or large pot with butter, season with salt, pepper, and nutmeg. Season the pork chops and plate them with the spinach‑savoy mixture on warmed plates.
