Ingredients
- 600 g pork tenderloin
- 3 cm ginger
- 2 cloves garlic
- 2 tbsp Vegetable oil
- 2 tbsp red curry paste
- 1 tsp ground turmeric
- 400 ml coconut milk
- 1 tbsp fish sauce
- 2 kaffir lime leaves
- 1 tsp brown sugar
- 1 handful Thai basil

Wash the meat, pat dry and slice into thin strips. Peel ginger and garlic; cut ginger into fine strips and garlic into thin slices.

Add oil to a hot wok and stir in curry paste. Briefly sauté, then add pork and cook 1-2 minutes. Remove pork and sauté garlic, ginger, and turmeric briefly. Deglaze with coconut milk. Stir in fish sauce, kaffir lime leaves, and sugar; simmer gently for about 5 minutes (add a little water if needed). Return pork to the wok and let it simmer quietly for another 3-4 minutes. Add Thai basil at the end, adjust seasoning with fish sauce, and serve.
