Small Veal Burgers

Ingredients

  • 400 g veal mince (order in advance at butcher)
  • 2 Eggs
  • 2 tbsp mustard
  • 1 handful flat-leaf parsley
  • 5 coriander stems
  • Salt
  • pepper (from grinder)
  • 1 tsp ground cumin
  • 2 onions
  • 3 tomatoes
  • 8 small burger buns (order in advance at baker if needed)
  • 50 g red cabbage spears
  • cherry tomatoes (for garnish)
  • flat-leaf parsley (for garnish)

Instructions

    Preheat grill. Mix veal mince with eggs and mustard. Wash herbs, pat dry, finely chop leaves. Combine with meat, season with salt, pepper, and cumin. Divide into 8 portions and shape into small patties. Chill in refrigerator until ready to grill.

    Peel onions and slice thinly into rings. Wash tomatoes, dry, remove stems, cut flesh into thin slices. Halve buns horizontally.

    Grill patties 3–4 minutes per side; toast bun halves on grill until golden brown. Top bottom bun halves with tomato slices and onion rings, setting aside 4 onion rings for decoration. Place patty on top, sprinkle with cabbage spears. Garnish with halved cherry tomatoes, flat-leaf parsley, and remaining onion rings. Tilt upper bun halves to decorate the burger.
