Ingredients

  • 400 g lean steak
  • 4 cloves garlic (sliced thin)
  • 150 g green beans
  • 30 g ginger
  • 100 g fava beans (thick beans)
  • 200 g Asian egg noodles
  • 1 small red chili pepper (deveined and finely chopped)
  • 1 tbsp chopped coriander
  • 1 Red Onion
  • soy sauce
  • sesame oil
  • Salt
  • ground pepper

Instructions

    Slice the meat into thin strips. Peel and grate the ginger finely. Mix the meat with 2 tbsp soy sauce, 2 tbsp sesame oil, salt, and pepper, and let marinate (best overnight). Cover the fava beans with water and soak overnight. The next day drain, cook in salted water until tender, then drain, rinse, and set aside. Wash, trim, and blanch the green beans in boiling salted water for about 8 minutes. Rinse and drain. Pat the meat dry with paper towels. Peel, halve, and slice the onion into thin rings. Cook the egg noodles according to package instructions, rinse, and drain. Wash the chili pepper, cut lengthwise, devein, remove the white membrane, and finely chop.

    Heat 2 tbsp oil in a wok and stir-fry the ginger, garlic, and onions vigorously. Add the chili. Push the vegetables aside slightly, add the meat, and stir-fry powerfully. Mix in the fava beans and green beans, continue cooking. Finally add the noodles, stir-fry until warm, then fold in the coriander. Season with soy sauce. Serve immediately.
