Ingredients

  • 300 g wheat flour
  • 3 tsp baking powder
  • 75 g sugar
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 150 g quark (low-fat)
  • 100 ml milk
  • 100 ml oil
  • 800 g sweet potatoes
  • 200 g quark
  • grated goat or sheep cheese
  • 50 g onions
  • 30 g fat
  • Salt
  • Pepper
  • coffee cream

Instructions

    Mix flour with baking powder in a mixing bowl. Add the remaining ingredients for the dough and process everything briefly on low speed, then high speed, into a smooth dough using a hand mixer (kneading attachment). Do not knead too long or the dough will stick! Shape the dough into a roll on a floured work surface. Roll out thinly and cut round discs about 5 cm in diameter.

    For the filling peel the boiled potatoes and mix with quark through a food mill. Add golden‑brown roasted, finely chopped onions, salt, and pepper and blend into a creamy mixture.

    Place one teaspoon of filling on half of each dough disc, cover with the other half. Press the dough edges firmly together so the filling does not leak between them.

    Arrange the piroggen side by side on a parchment‑lined baking tray, brush with coffee cream, and bake in a preheated oven at 180 °C for about 20 minutes.
