Poppy Seed Crackers

Ingredients
- 200 g wheat flour
- 200 g rye flour
- 50 g rye bran
- 1 tsp salt
- sunflower oil
- flour (for dusting)
- 40 g poppy seeds

Put both flours with the bran into a bowl. Add the salt, 3-4 tbsp oil and about 350 ml lukewarm water, then knead with dough hooks until a firm, smooth dough that releases from the bowl edges forms. Adjust the water amount slightly if needed. Cover and let rest for about 30 minutes.

Preheat the oven to 180°C fan (convection).

Knead the dough again on a floured surface and divide into 6 pieces. Place them on a baking sheet lined with parchment paper. Brush with oil and sprinkle with poppy seeds. Bake in the oven for about 40 minutes until golden brown and crisp.

Remove from the oven, carefully take them off the sheet and let cool.
