Homemade Bread Loaves

Ingredients
- 250 g wheat flour
- 200 g rye groats
- 150 g dry sourdough starter
- 1 cube fresh yeast
- 1 tbsp salt
- olive oil
- flour (for working)
- seeds as desired (e.g., flaxseed, sesame seeds)
Instructions

Add the flour, groats and dry sourdough starter to a bowl and form a well in the center. Crumble the yeast into the well and mix with 2 tbsp lukewarm water. Cover and let rise for about 30 minutes. Then add approximately 250 ml lukewarm water and salt to the bowl and knead everything into a smooth dough; adjust the amount of water if necessary. Keep covered and let rise another ~30 minutes.

Preheat the oven to 240 °C (464 °F).

Brush the baking sheet with oil. On a floured work surface shape the dough into a roll and cut it into 12 pieces. Form each piece into a small stick. Place them on the sheet and let rise for another ~15 minutes. Brush with water, sprinkle seeds if desired, and bake in the preheated oven (with a shallow pan of water inside) for about 10 minutes. Reduce the temperature to 180 °C (356 °F), brush the rolls again with water and bake for an additional 20–25 minutes until finished. Remove from the sheet and let cool.

Tie the loaves together with labeled paper tags if desired and give them as gifts.
