Ingredients

  • 100 g Arugula
  • 2 oranges
  • 2 tbsp pine nuts (15 g each)
  • 150 g feta cheese (45% fat in the product)
  • 3 tbsp olive oil
  • 2 tsp mustard
  • 1 tsp Honey
  • 1 tbsp White Wine Vinegar
  • Salt
  • Pepper

Instructions

    Wash and dry the arugula. Peel the oranges generously and cut segments between the membranes.

    Toast the pine nuts in a dry pan over medium heat for 2–3 minutes until golden brown. Meanwhile, crumble the feta cheese roughly. Arrange the arugula with orange segments, feta, and pine nuts in a bowl.

    Whisk together olive oil, mustard, honey, and vinegar; season with salt and pepper. Drizzle the dressing over the salad, toss lightly, and serve.
