Polish-Style Potato Dumplings Filled with Quark

- 1 kg starchy boiling potatoes
- 125 g flour (add more if needed)
- 1 egg
- Salt
- nutmeg
- 2 tbsp Cornstarch
- 500 g low-fat quark (well drained and squeezed dry)
- Salt

For the dumplings, peel, wash, and boil the potatoes in salted water for about 30 minutes. Drain and press the hot potatoes through a potato masher. Knead with flour, egg, a pinch of salt, and nutmeg into a smooth dough.

Bring plenty of salted water to a boil. Mix the cornstarch with a little cold water and stir it into the boiling water.

Season the quark with salt and pepper. With damp hands, shape dumplings from the potato dough, press a deep hollow in the center, and fill with quark. Cook in the hot water for about 20 minutes until done. Remove with a slotted spoon, let drain slightly, arrange on a plate with parsley garnish, and serve.
