Polenta with Porcini Mushrooms

Ingredients
- 250 g Polenta (Instant)
- 50 g butter
- Salt
- Pepper (freshly ground)
- nutmeg
- 0.5 bunch Parsley
- 600 g fresh porcini mushrooms
- 1 untreated lemon (juice)
- 2 Garlic cloves
- 20 g butter
- 2 tbsp olive oil
- 50 ml dry white wine

Bring vegetable broth to a boil, add the polenta while stirring and cook according to package instructions. Remove from heat, stir in butter and season with salt, pepper, and nutmeg.

Wash the parsley, shake off excess water, set aside a few leaves, finely chop the rest.

Clean and slice the porcini mushrooms. Peel and finely mince the garlic. Heat butter and oil in a large pan, add the mushrooms and garlic, sauté for a few minutes, pour in lemon juice and wine, season with salt and pepper, stir in parsley, and simmer gently for about 5 minutes. Spread the finished polenta onto plates, top with the mushroom mixture, and garnish with parsley leaves before serving.
