Cauliflower Steaks with Sweet Potato Mash

Ingredients

  • 1 kg Cauliflower
  • 5 tbsp olive oil
  • Salt
  • mixed pepper
  • 1 tbsp Lemon Juice
  • 2 sweet potatoes (250 g each)
  • 150 ml Vegetable broth
  • 1 handful basil (5 g)
  • 60 g dried tomatoes (soft tomatoes)
  • 90 g green olives (3 tbsp; seedless)
  • 90 g black olives (3 tbsp; seedless)
  • nutmeg

Instructions

    Clean and wash cauliflower, cut into quarters lengthwise and slice into ~1 cm thick steaks. Brush with 2 tbsp oil, season with salt and pepper, place on parchment-lined baking sheet. Drizzle with lemon juice and bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for 25 minutes until golden brown.

    Meanwhile peel sweet potatoes, cut into chunks and add to a pot with broth. Cook sweet potatoes for 15 minutes over medium heat until tender. While cooking wash basil, pat dry, tear leaves, set aside some for garnish, cut the rest into strips. Dice tomatoes and olives, mix with basil strips.

    Mash sweet potatoes with a potato masher, fold in 2 tbsp oil. Season mash with salt, pepper and a pinch of freshly grated nutmeg.

    Plate cauliflower steaks on top of the mash, spoon olive mixture over them. Drizzle remaining oil, season with extra pepper and garnish with reserved basil leaves.
