Poached Salmon on Vegetables

Ingredients

  • 200 ml dry white wine
  • 1 bay leaf
  • 3 allspice berries
  • 3 Juniper berries
  • 4 salmon fillets (≈160 g each)
  • 1 Shallot
  • 1 tsp butter
  • 100 ml fish stock
  • 100 ml heavy cream
  • Salt
  • Pepper
  • 4 lettuce leaves (head lettuce)

Instructions

    Boil 100 ml wine with 250 ml water, bay leaf, allspice and juniper. Reduce heat to about 80°C. Rinse salmon, place in the liquid, cover and poach for about 10 minutes.

    For the sauce peel and finely dice the shallot. Sauté in hot butter until translucent. Deglaze with remaining wine, add stock, simmer 2-3 minutes, pour in cream, reduce slightly and blend with a hand blender. Season with salt and pepper.

    Place salmon on rinsed and cleaned lettuce, top with sauce and serve.

    Serve additional vegetables as desired.
