Grilled Stuffed Squid Tubes

Ingredients
- 12 squid, about 120 g each (ready to cook)
- 2 fresh garlic cloves
- 2 anchovy fillets
- 1 sprig rosemary
- 3 tbsp olive oil
- 2 tbsp white bread crumbs
- 2 Tomatoes
- 1 Red Onion
- 2 tbsp freshly chopped coriander leaves
- 1 tbsp Lemon Juice
- Sea salt
- ground pepper

Wash the squids, cut off the tentacles, clean and pat dry. Cut the tentacles into small pieces. Peel the garlic and combine with anchovies in a mortar. Rinse the rosemary, pat dry and break into small pieces. Add 2 tbsp oil to the mortar and crush finely. Mix the crushed mixture with the tentacle pieces and bread crumbs in a bowl. Boil the tomatoes briefly, cool, peel, quarter, seed and dice them. Dice the onion. Combine the diced tomato, onion, coriander, and the crushed mixture; season with lemon juice, sea salt, and pepper. Fill the squid tubes and secure with toothpicks.

Grill on a hot, oiled grill for 5-6 minutes all around.
