Poached Mirabelle Plums

Poached mirabelles with vanilla syrup and mint yogurt: a compote of the finest quality! Elegant little flowers with peppermint aroma for a delightful taste.

Ingredients

  • 300 g mirabelle plums
  • 1 Vanilla bean
  • 150 ml white wine (or grape juice)
  • 4 tbsp mild honey
  • 2 tbsp mint syrup
  • 150 g Yogurt (1.5% fat)

Instructions

    Wash and pit the mirabelle plums.

    Split the vanilla bean lengthwise and scrape out the seeds. Bring the white wine, honey, vanilla bean, and seeds to a boil.

    Add the mirabelle plums and simmer gently for 10 minutes, just below boiling point (poach).

  4. 4.

    Remove the plums with a slotted spoon from the liquid (sud). Let both separate components cool.

    Stir the mint syrup into the yogurt. Fill glasses with some of the poaching liquid and place the plums on top, then cover with the mint yogurt.
