Ingredients

  • 400 g potatoes (starchy, boiling type)
  • 100 g flour
  • 2 tbsp semolina
  • 1 tbsp softened butter
  • 1 egg yolk
  • 2 tbsp sugar
  • Salt
  • 8 plums (very ripe)
  • 8 pieces cube sugar
  • 150 g butter
  • 100 g ground poppy seeds
  • flour (for the work surface)
  • plums (for garnish)

Instructions

    Wash the potatoes and cook them with skins on for about 25 minutes until tender, drain, let steam off briefly, then peel and press hot through a potato ricer onto a workboard. Let the potato mash cool.

    Add flour, semolina, butter, sugar, egg yolk, and a pinch of salt to the pressed potatoes and quickly knead into a homogeneous dough. Rest the dough for about 20 minutes.

    Meanwhile wash the plums, cut them open so the pit can be removed, remove the pit, and instead insert a piece of cube sugar.

    On a floured work surface roll the potato dough into a roughly 5 cm thick log, slice it into 12 equal pieces, flatten each slightly, place one plum on each, and shape into dumplings. Ensure the dough layer around each plum is tightly sealed with no cracks.

    Drop the dumplings into boiling water and let them cook for about 20 minutes, occasionally nudging them so they rotate.

    In the meantime melt butter in a large pan, sauté the poppy seeds until fragrant, then remove from heat and set aside. Lift the finished dumplings, drain, and drizzle with the poppy seed butter. Plate immediately and garnish with plums.
