Ingredients

  • 4 eggs
  • 50 ml vinegar
  • 150 g young spinach
  • 1 tbsp butter
  • Salt
  • Pepper
  • nutmeg
  • 2 English muffins
  • 4 slices Smoked Salmon
  • dill sprigs (for garnish)

Instructions

    Crack each egg into a small bowl or cup.

    Pour the vinegar into 1 l of nearly boiling water in a small pot. Gently slide each egg into the water. Use a spoon to shape it into a round form. Ideally, the yolk should be completely surrounded by the white. Poach for about 4 minutes.

    Wash and rinse the spinach, then drain well. Melt the butter in a hot pan. Add the spinach and let it wilt. Allow the liquid to evaporate and season with salt, pepper, and nutmeg.

    Halve the muffins horizontally and toast until golden brown. Top each with spinach and place a slice of smoked salmon on top. Use a slotted spoon to lift the eggs and set them gently on the salmon.

    Serve garnished with dill sprigs.
