Poached Beef with Green Sauce

Ingredients
- 1 bundle of soup vegetables
- 1 kg beef brisket (ready to cook)
- 1 bay leaf
- 2 allspice berries
- 3 peppercorns
- Salt
- 2 handfuls fresh herbs (chives, parsley, cress, chervil, borage, sorrel, pimpinelle)
- 2 boiled eggs
- 1 Shallot
- 150 g yogurt
- 250 g sour cream
- Lemon juice
- pepper (ground)
- 500 g waxy potatoes

Clean and cut the soup vegetables into pieces. Wash the meat, add it with the vegetables and spices to a pot, fill with enough water to cover everything, bring to a boil with salt, skim off foam, then simmer the meat over medium heat for 2 hours.

Meanwhile wash the herbs, shake dry, finely chop the leaves. Peel and chop the eggs. Dice the shallot, mix it with the eggs, herbs, sour cream, yogurt, lemon juice, and season with salt, pepper, and sugar.

Peel, wash, quarter the potatoes and boil in salted water for 20-25 minutes. Remove the meat from the broth, slice it, plate with the potatoes, drizzle with some broth, and serve the green sauce separately.
