Vegetable Bacon Soup

Ingredients

  • 2 stalks leeks
  • 1 Carrot
  • 400 g potatoes (starchy)
  • 400 g celery
  • 8 slices bacon
  • 800 ml vegetable broth (or chicken broth to taste)
  • 1 sprig rosemary
  • Salt
  • ground pepper
  • ground nutmeg
  • 2 tbsp chopped parsley

Instructions

    Wash, trim and slice the leeks into rings. Peel the carrot, cut it lengthwise in half and slice into rounds.

    Peel and dice the celery and potatoes. In a pot, brown the bacon slices without oil, add the vegetables, pour in the broth, add the rosemary sprig, cover and simmer for about 20-30 minutes.

    Season with salt, pepper and nutmeg. Finally sprinkle with parsley and serve.
