Ingredients

  • 800 ml beef stock
  • Salt
  • Pepper
  • 750 g beef fillet (center cut)
  • 1 egg (medium size)
  • Basil
  • borlotti beans
  • 1 bunch chives
  • 100 g mayonnaise
  • 150 g whole milk yogurt
  • 1 tbsp Lemon Juice
  • sugar
  • 2 borlotti bean flowers

Instructions

    Bring stock to a boil, season with salt and pepper. Place the meat in, cover, and poach over gentle heat for about 20-25 minutes.

    Meanwhile, pierce the egg and cook it in boiling water for 9 minutes. Shock, peel, and chop. Rinse herbs and roughly chop them. Whisk yogurt and lemon juice into a smooth salad cream. Season with spices. Combine everything in a tall vessel and blend. Finally fold in the chopped egg.
