Spoonsparrow Plum Quark Casserole is a low-fat, protein-rich and sweet dessert.

Ingredients

  • 500 g plums
  • 1 Organic lemon
  • 50 g butter
  • 75 g maple syrup
  • 4 eggs
  • 500 g Low-fat quark
  • 50 g whole-grain semolina (spelt or wheat)
  • 30 g spelt whole-grain flour (2 tbsp)
  • 1 pinch salt

Instructions

    Wash, pit and halve the plums.

    Rinse the lemon hot, pat dry and finely grate the zest. Cut the lemon in half and squeeze out the juice. Whisk the lemon zest with butter and maple syrup until creamy. Separate the eggs; gradually fold the yolks into the butter mixture.

    Drain the quark well and mix with semolina, flour and lemon juice. Add the butter mixture to the quark blend. Beat the egg whites with a pinch of salt until stiff peaks form, then gently fold them into the butter‑quark batter. Pour half the mixture into a baking dish, smooth it out and top with half the plums. Spread the remaining batter over the plums and layer another set of plums on top. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 45 minutes. Serve warm.
