Ingredients

  • 3 large Boskop apples
  • 3 tbsp Lemon juice
  • 150 g flour
  • 175 ml dry white wine
  • 3 tbsp oil
  • 3 eggs
  • 1/2 vanilla bean, split and scraped
  • 1 tsp grated lemon zest
  • a pinch of salt
  • 2 tbsp sugar
  • 750 ml oil (for frying)
  • sugar (for dusting)
  • cinnamon (for dusting)

Instructions

    Peel the apples, remove the core with an apple corer, and slice them into thicker rounds. Drizzle with lemon juice.

    Separate the eggs. Whisk flour with wine, oil, egg yolks, vanilla, and lemon zest. Beat egg whites with salt and 2 tbsp sugar until stiff peaks form, then fold into the batter.

    Heat oil to 160°C (320°F).

    Dip apple slices one at a time into the batter and fry in batches until golden brown.

    Remove and drain on paper towels.

    Dust immediately with sugar and cinnamon before serving.
