American-Style Banana Cake

Ingredients

  • 1 untreated lemon (zest)
  • 120 g soft butter
  • 175 g sugar
  • 2 Eggs
  • 1 pinch salt
  • 0.5 tsp cinnamon
  • 2 ripe bananas
  • 100 g grated hazelnuts
  • 300 g flour
  • 2 tsp Baking powder

Instructions

    Preheat the oven to 160°C fan.

    Grease a cake tin with butter and dust it with flour.

  3. 3.

    Add the butter in chunks to a mixing bowl. Add the sugar and beat everything until creamy using a mixer. Gradually fold in the eggs, salt, cinnamon and lemon zest. Peel the bananas, mash them roughly with a fork and stir into the batter. Add the hazelnuts and mix. Sift the flour and baking powder over the batter and fold in. Pour the batter into the tin and bake for about 50‑60 minutes until golden brown. Let it cool in the tin, then turn out onto a plate and serve.
