Plum Muffins

Ingredients

  • 200 g plums
  • 300 g whole grain flour (e.g., wheat, spelt, emmer)
  • 2 tsp Baking powder
  • 1 tsp cinnamon
  • 1 egg
  • 100 g coconut palm sugar
  • 80 ml sunflower oil
  • 250 ml buttermilk

Instructions

    Wash the plums, pat dry, halve, pit and quarter. Mix the flour, baking powder and cinnamon.

    Whisk the egg with the sugar, oil and buttermilk in another bowl. Fold in the dry mixture until just moist. Gently fold in the plums.

    Place paper liners into a muffin tin, fill with batter and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 30 minutes until golden brown. Remove and cool.
