Plum Jam with Cream

Ingredients
- 200 g heavy cream
- 1 packet gelatin
- 1 packet vanilla sugar
- 12 large ripe plums
- 1 organic orange (unprocessed)
- 1 tsp cinnamon
- 100 ml apple juice
- 2 tbsp sugar
- 1 sheet red gelatin
- 5 sheets white gelatin
- plum wine (for topping)

Wash the orange, zest its peel and set aside for garnish. Squeeze out the juice. Wash the plums, halve them, remove pits, and place in a pot with sugar, apple juice, orange juice, cinnamon, and 200 ml water; simmer gently for about 30 minutes.

Line a sieve with a cotton cloth and pour the plum mixture over it, allowing it to drain well (2-3 hours) while weighing it down with a smaller pot.

Soak gelatin in plenty of cold water. Measure out 600 ml of the liquid, topping up with plum wine if needed. Dissolve the gelatin in a small pot, mix into lukewarm plum juice, pour into four glasses and chill until set.

Whip the cream with gelatin stabilizer and vanilla sugar until stiff peaks form. Spoon the whipped cream over the jam-filled glasses, garnish with orange zest curls, and serve.
