Plum Cake with Walnut Crumble

Ingredients
- 0.5 cube fresh yeast (≈21 g)
- 160 ml lukewarm milk
- 400 g flour
- 80 g sugar
- 1 egg
- 80 g softened butter (in small pieces)
- 1.5 kg plums
- 120 g butter
- 100 g flour
- 100 g sugar
- 100 g ground walnuts

Crush the yeast in a bowl and dissolve it with a little milk, then stir in 2 tbsp of flour and cover for about 30 minutes to rise. Sift the remaining flour onto a work surface, make a small well, and pour the pre‑mix into it. Quickly combine with sugar, the rest of the milk, egg, and butter to form a smooth dough. Transfer the dough to a bowl, cover, and let rise in a warm place for at least 1 hour until doubled.

Wash, halve, and pit the plums. Melt the butter over low heat, then cool. Mix flour, sugar, and walnuts; add the cooled butter and work with your hands into crumbs.

Knead the yeast dough on lightly floured surface, roll it out, and place on a greased baking sheet. Arrange the plums in a tiled pattern on top. Cover and let rise again for 15 minutes in a warm spot.

Preheat the oven to 180 °C (350 °F) with both fan and conventional heat.

Sprinkle the crumble over the plums and bake in the preheated oven for about 45 minutes.
