Fruit Cake

Ingredients
- 150 g flour
- 50 g oat bran
- 50 g sugar
- a pinch of salt
- 1 egg
- 125 g butter
- flour (for dusting)
- butter (for the pan)
- 3 plums
- 3 apricots
- 2 Apples
- 1 tbsp Lemon Juice
- 200 g quark
- 1 egg yolk
- 40 g powdered sugar
- 1 tsp Cornstarch
- 4 tbsp apricot jam

For the dough, mix flour with oat bran, sugar and a pinch of salt. Sprinkle onto the work surface, create a well in the center, crack the egg into it and scatter butter pieces around the well. Quickly knead by hand into a smooth dough, shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Wash the plums and apricots, halve them and remove pits. Peel the apples, quarter them, remove core and cut into thin slivers. Immediately mix with lemon juice.

Preheat the oven to 180°C (350°F) with top and bottom heat.

Roll out the dough on a floured surface slightly larger than the pan, line a buttered tart pan with it and lift up the edges to form a rim.

Whisk quark with egg yolk, powdered sugar and cornstarch. Spread the quark cream over the pastry base.

Arrange apple slivers fan‑shaped on the base and place apricot and plum halves in the center. Bake in the preheated oven for about 40 minutes until golden brown. Warm apricot jam with 1–2 tbsp water. Brush the warm tart with the jam before serving.
