Plum Cake with Streusel

Ingredients
- 350 g flour
- 0.5 cube Yeast
- 75 g sugar
- 120 ml lukewarm milk
- 1 pinch salt
- 1 egg
- 60 g melted butter
- 500 g plums
- flour (for dusting)
- 2 tbsp breadcrumbs (or bread crumbs)
- 80 g flour
- 40 g ground almonds
- 80 g sugar
- 100 g liquid butter
- 1 tsp cinnamon powder

Sift the flour into a bowl and form a well in the center. Dissolve the yeast and 1 tbsp sugar in 4-5 tbsp milk and pour into the well. Stir with a little flour to make a pre‑starter and let rise covered for about 15 minutes. Then add the remaining milk, the rest of the sugar, salt, egg and butter, knead into a smooth dough that lifts from the bowl edges. Cover and let rise for about 45 minutes.

Preheat the oven to 180 °C (356 °F) with fan or conventional heat. Line a baking tin with parchment paper.

Knead the dough again on a floured surface, press it out relatively thick, shape a 3‑4 cm rim, and place in the tin. Sprinkle the bottom with breadcrumbs.

Wash, pit and halve the plums. Arrange them cut side up in a brick pattern over the dough.

For the streusel mix flour, ground almonds, sugar, butter and cinnamon by hand into crumbs. Scatter over the plums and bake for about 50 minutes (test with a skewer).

Remove from oven, cool, lift out of tin and serve sliced.
