Plum Cake with Streusel

Ingredients

  • 300 g spelt flour (Type 1050)
  • 50 g almond flour
  • 1 tsp Baking powder
  • 125 g maple syrup
  • a pinch of salt
  • 200 g butter
  • 1 egg
  • 30 g whole wheat breadcrumbs
  • 1000 g plums
  • 1 tsp ground cinnamon
  • 50 g ground hazelnuts

Instructions

    Knead 250 g spelt flour, almond flour, baking powder, 75 g maple syrup, salt, 150 g butter in pieces and the egg into a smooth dough. Wrap in cling film and chill for 1 hour.

    Wash, halve and pit the plums. Mix them carefully with ground cinnamon. For the streusel, combine the remaining spelt flour, maple syrup, butter and ground hazelnuts and work them by hand into crumbs. Set aside.

    Roll out the dough, line a springform pan and shape a rim. Sprinkle the breadcrumb layer on top of the dough and prickle it several times with a fork. Arrange the plum halves in a fan shape on the base and sprinkle streusel over the plums. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) on the middle rack for 35–40 minutes. Remove and let cool.
