Spelt Apple Cake with Almonds

A simple spelt apple cake with almonds? The batter recipe is refined with a touch of lemon – spicy-fresh!

Ingredients

  • 2 sour apples
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 150 g soft butter
  • a pinch salt
  • 80 g coconut blossom sugar
  • 3 eggs
  • 300 g spelt whole‑grain flour
  • 1 tsp Baking powder
  • 50 g ground almonds
  • 60 ml milk (3.5% fat)

Instructions

    Peel the apples, quarter them, remove the cores and slice the quarters into thin slices. Mix with lemon juice and cinnamon.

    For the batter beat butter with salt until fluffy. Alternately fold in coconut blossom sugar and eggs. In another bowl combine flour with baking powder and almonds. Gradually whisk the flour mixture with milk into the batter, stirring briskly to form a smooth, spreadable dough. Fold in the apples and pour the dough into a parchment‑lined baking tin. Smooth the top and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 40 minutes until golden brown (skewer test).
