Plum Cake with Caramel

Ingredients
- 450 g flour
- 1 pinch salt
- 0.5 cube fresh yeast (21 g)
- 70 g sugar
- 180 ml lukewarm milk
- 1 egg
- 80 g Butter
- 1 kg fresh blue plums
- cinnamon powder (for sprinkling)
- 5 tbsp pearl sugar
- 100 g sugar

For the dough mix flour with salt in a bowl, press a well in the middle, crumble in the yeast and stir with 1 tbsp sugar and 3 tbsp lukewarm milk. Dust the edges with a little flour and cover to rest in a warm place for 15 minutes. Add the remaining dough ingredients and knead by hand into a smooth yeasted dough. If the dough is too dry add more milk; if it’s too wet add more flour. Cover and let rest another 60 minutes.

Wash the plums, halve them and pit them.

Preheat the oven to 180°C (350°F) with top and bottom heat.

Roll out the dough on a floured surface to fit the baking tray and line the greased tray with it. Top with the plums and sprinkle with cinnamon and pearl sugar. Bake in the preheated oven for about 45 minutes.

Meanwhile, bring 100 ml water with sugar to a boil. Stir slowly to caramelize.

Drizzle the cake with the caramel and let cool.
