Ingredients

  • 250 ml milk
  • 150 ml coconut milk
  • 80 g milk rice
  • 50 g sugar
  • 2 Eggs
  • 4 ripe figs
  • 2 tbsp liquid honey
  • 0.5 untreated lemon (juice)
  • 1 tsp ground cinnamon

Instructions

    Take 4 tablespoons from the milk. Bring the remaining milk with the coconut milk to a boil. Add the rice and sugar, cover and simmer for about 40 minutes over low heat until the rice is tender. Remove from heat and separate the eggs. Whisk the yolks with the retained milk and stir into the still hot rice. Let cool while stirring occasionally. Beat the whites stiffly and fold them into the cooled rice.

    Clean the figs and cut them into narrow slivers. Mix honey with lemon juice and marinate the figs for 20 minutes.

    Distribute the milk rice onto bowls, sprinkle with cinnamon, arrange the figs on top, and drizzle with the remaining marinade before serving.
