Ingredients
- soft butter (for the baking dish)
- soft breadcrumbs (for the baking dish)
- 800 g plums (or damsons)
- 4 eggs
- 250 g quark
- 100 ml whipping cream
- 0.5 untreated lemon (zest and juice)
- 1 tsp vanilla essence
- 100 g sugar
- 80 g breadcrumbs
- powdered sugar (for dusting)
Instructions

Preheat the oven to 180°C (350°F) with fan and top heat. Butter a baking dish and line it with breadcrumbs.

Wash, halve and pit the plums. Separate the eggs; whisk the yolks with quark, cream, lemon zest, vanilla and sugar. Beat the whites with lemon juice until stiff, then fold into the quark mixture along with the remaining breadcrumbs. Arrange half of the plums on the bottom of the dish, cover with the batter, spread evenly, top with the remaining plums, and bake for about 40 minutes until golden brown.

Remove from the oven and serve best while hot, dusted with powdered sugar.
