The Plum & Blackberry Casserole with Crumble from Spoonsparrow is a healthy autumn dessert.
Ingredients
- 400 g blackberries
- 4 plums
- 1 vanilla pod
- 100 g butter (+ 1 tsp for greasing)
- 75 g whole grain sugar
- 15 g cornstarch (1 tbsp)
- 75 g pecans
- 160 g spelt whole wheat flour
- 60 g ground almonds
- 1 pinch salt

Wash and dry the blackberries on paper towels. Wash, halve, pit, and slice the plums into wedges. Split the vanilla pod lengthwise and scrape out the seeds with a knife.

Grease a casserole dish with 1 tsp butter. Mix the blackberries, plums, vanilla seeds, 1 tbsp whole grain sugar, and cornstarch, then pour into the dish.

Coarsely chop the pecans. Combine the remaining butter, rest of the whole grain sugar, flour, almonds, and pinch of salt; form into a crumble. Fold in the pecans and spread over the fruit.

Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 35 minutes. Serve warm.
