Panna Cotta with Fruit Sauce

Ingredients
- 0.5 Vanilla bean
- 300 ml heavy cream
- 3 tbsp raw cane sugar
- 4 gelatin sheets
- 80 g cherries
- 80 g mixed berries (blueberries, raspberries, blackberries)
- 1 pinch Cinnamon powder
- 1 pinch clove powder
- 80 ml red fruit juice
- 1 tsp Cornstarch

Split the vanilla bean lengthwise and scrape out the seeds. Bring the cream with 2 tbsp sugar, vanilla seeds, and the bean to a boil, then remove from heat.

Soak gelatin sheets in cold water, squeeze out excess liquid, and add them to the hot vanilla cream. Stir until dissolved. Let the mixture cool while stirring occasionally until it starts to set. Remove the vanilla bean, rinse 4 glasses with cold water, fill them with the vanilla cream, and chill for at least 4 hours.

Wash cherries, reserve four whole ones, pit and chop the rest. Wash, dry, and trim berries. Combine cherries, remaining berries, sugar, cinnamon, clove powder, and fruit juice in a pot; bring to a boil and simmer for 5 minutes. Dissolve cornstarch in cold water and stir into the fruit mixture to thicken.

Pour the fruit sauce over the set panna cotta and let it cool slightly. Serve each portion garnished with one cherry.
