Pizza with Rocket and Zucchini

Ingredients

  • 250 g flour
  • 1 packet dry yeast
  • Salt
  • 3 tbsp olive oil
  • 125 ml lukewarm water
  • 150 g cherry tomatoes
  • 1 Zucchini
  • 1 bell pepper
  • 125 g mozzarella
  • 4 tbsp passata
  • 200 g pizza cheese
  • Salt
  • Pepper
  • 1 bundle rocket

Instructions

    Mix flour with yeast in a bowl. Add salt, olive oil and water and knead with dough hooks until smooth. Cover and let rise in a warm place for 30 minutes.

    Rinse tomatoes and halve them. Rinse zucchini, halve it and slice into rounds. Clean pepper, deseed, rinse and dice small.

    Knead the dough briefly on a floured surface and roll out into a circle. Place on a baking sheet lined with parchment paper.

    Slice mozzarella and lay on top. Spread passata over it and sprinkle 50 g pizza cheese. Top with tomato halves, zucchini slices and pepper cubes, season with salt and pepper.

    Sprinkle remaining pizza cheese over the top. Bake in a preheated oven at 220°C (fan: 200°C, gas: level 3-4) for about 20 minutes.

    Rinse rocket, pat dry and shake off excess water. Distribute over the finished pizza and serve immediately.
