Olive Cheese Pizza

Ingredients

  • 500 g flour
  • 40 g yeast
  • 1 pinch sugar
  • 0.25 l water
  • 5 tbsp olive oil
  • 2 onions
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 1 can peeled tomatoes
  • 1 tsp Oregano
  • 150 g pecorino
  • 1 bunch parsley
  • 100 g green olives

Instructions

    Sift the flour into a bowl, make a well in the center, crumble the yeast into it and stir with lukewarm water, sugar and olive oil; dust some flour over the mixture. Cover and let rise for 30 minutes. Knead everything well until the dough bubbles, cover again and leave to rise in a warm place for 60 minutes.

    Roll out four 20 cm pizzas, place on a baking tray, prickle the base several times with a fork. For the topping peel and finely chop onion and garlic, sauté in olive oil, add oregano, salt and pepper. Add tomatoes and simmer gently for 30 minutes. Spread tomato sauce over the dough, sprinkle grated pecorino, then scatter chopped parsley and olives on top. Bake at 200°C for 15 minutes until crisp.
