Pizza-Muffins with corn and ham from Spoonsparrow: With less than 150 calories per piece, the muffins are a really figure-friendly snack.
Ingredients
- 200 g Spelt flour Type 1050
- 50 g 5-grain flakes
- 0.5 packet Baking powder
- 1 tsp Salt
- 250 ml Buttermilk
- 2 Eggs
- 50 g dried tomatoes
- 50 g mature Gouda (or sharper Gruyère)
- 140 g Corn (drained weight; can)
- 100 g Turkey ham
- 1 tbsp Rapeseed oil
Instructions

Combine flour, grains, baking powder and salt in a bowl. Add buttermilk and eggs and mix well with the dough hook of the hand mixer. The dough is initially still quite liquid.

Cut tomatoes into strips.

Grate cheese. Drain corn in a small sieve.

Cut turkey ham into cubes. Mix tomatoes, cheese, corn and ham into the dough.

Place paper liners in the molds of a muffin tin and grease with oil. Fill with batter and bake the muffins in a preheated oven at 200 °C (Fan: 180 °C, Gas: Mark 3) for 30–35 minutes.
