Ingredients

  • 250 g flour
  • 20 g fresh yeast (1/2 cube)
  • 100 ml lukewarm water
  • 3 tbsp olive oil
  • Salt
  • 2 small pears
  • juice of 1 lemon
  • ground pepper
  • 200 g Gorgonzola
  • 3 tbsp chopped walnut kernels
  • arugula

Instructions

    Add flour, oil and salt to a bowl. Dissolve yeast in lukewarm water, then pour into the flour and mix with the dough hooks of an electric hand mixer until a smooth dough forms. Cover and let rise in a warm place for about 45 minutes.

    Wash pears, cut them lengthwise into quarters, remove cores and slice into strips, drizzle with lemon juice.

    Cut Gorgonzola into small pieces.

    Knead the dough on a lightly floured surface, roll it out into a circle, place on a greased baking sheet and shape a slightly thicker edge.

    Distribute pear slices over the dough, sprinkle cheese on top.

    Bake the pizza in a preheated oven at 220°C (lower rack) for about 20 minutes.

    Season with pepper before serving and scatter torn arugula leaves and walnut kernels on top.
