Pita Rolls with Dip

Ingredients

  • 2 Garlic cloves
  • 0.5 onion
  • 1 tbsp Olive Oil
  • 500 g ground beef
  • 2 tbsp Tomato paste
  • 1 tsp Cayenne pepper
  • Salt
  • pinch sugar
  • pepper (ground)
  • 200 g ricotta
  • 3 tbsp finely chopped parsley
  • 1 tbsp chive ribbons
  • 1 tbsp whipping cream (at least 30% fat)
  • 10 tortilla flatbreads

Instructions

    Preheat the oven to 150°C (Oven rack in the middle). Peel and finely chop the garlic and onion. Heat the olive oil and brown the ground beef thoroughly. Reduce heat, add the garlic and onion, and sauté for about 3 minutes while stirring. Add the tomato paste and about 150 ml water, let it reduce slightly. When most of the liquid has evaporated, season with cayenne pepper, salt, sugar, and pepper.

    Whisk the ricotta with the whipping cream and chopped herbs, salt, and pepper. If the mixture is not creamy enough, add another tablespoon of cream. Warm the tortillas in the preheated oven, then spread each with different fillings and roll them up. Cut diagonally into pieces and serve with various dips as desired.
