Matjes Tartare

Ingredients

  • 2 small matjes fillets
  • 1 shallot (diced)
  • 1 pickled cucumber (diced)
  • 3 slices of toast bread
  • 1 tbsp butter
  • 2 head lettuce leaves
  • Lemon juice
  • pepper (ground)
  • chives (for garnish)

Instructions

    Wash the matjes, pat dry and finely dice. Mix with diced shallots and cucumbers, season with lemon juice and pepper.

    Cut circles about 4-5 cm in diameter from the toast. Fry both sides in hot butter until golden brown. Wash and clean lettuce leaves, place a small piece on each toast. Arrange tartare on top and garnish with chives before serving.
