Pistachio Truffles with Green Tea

Ingredients

  • 600 g white couverture chocolate
  • 150 ml milk
  • 4 tbsp matcha powder
  • 200 g pistachios
  • 1 tsp salt

Instructions

    Chop the chocolate into small pieces. Warm the milk in a saucepan and whisk in the matcha powder. Gradually stir in the chocolate until it melts completely in the milk. Transfer to a bowl and refrigerate for about 2 hours.

    Roast the pistachios in a dry skillet until fragrant. Remove, mix with salt, and let cool. Pulse in a blender or nut mill until finely ground.

    Whisk the chocolate mixture with an electric hand mixer until creamy. Fill a piping bag fitted with a smooth tip and pipe small dollops (about hazelnut-sized) onto parchment paper. Refrigerate again for about 45 minutes.

    With as cool hands as possible, roll the chilled dollops into balls and coat them in pistachios.
