Sweet Apple Soup with Tapioca

Ingredients
- 100 g Tapioca
- 600 ml Apple juice
- 400 ml heavy cream
- 100 g brown sugar
- 1 Banana
- 2 plums
- 1 untreated lime (juice and zest)
- 1 passionfruit

Place tapioca in a bowl, cover with hot water and soak for about 10 minutes.

Bring the apple juice with the cream and sugar to a boil, reduce heat to the lowest setting, add the tapioca pearls and simmer on low flame for about 20 minutes until the pearls become translucent.

Peel the banana and cut into slightly diagonal slices. Wash the plums, halve them, remove seeds and slice into fine strips. Add both to the soup and season with lime juice and sugar. Remove from heat and let cool. If the mixture is too thick, add a little water.

Halve the passionfruit and scoop out the pulp with seeds. Distribute the soup in bowls, garnish with passionfruit pulp and lime zest, and serve.
