Pistachio Ice Cream

The pistachio ice cream with kadayif and chocolate from American Pistachio Growers is inspired by Trend-Schoki. The recipe can be found here at Spoonsparrow.

Ingredients

  • 400 ml vanilla protein drink or sweetened plant-based milk
  • 100 g pistachio cream or sweetened pistachio spread
  • 4 tbsp roasted kadayif (coarsely chopped)
  • 50 g dark chocolate (at least 70% cocoa content)
  • 50 g American pistachios (roasted and salted)

Instructions

    Whisk the protein drink with 75 g pistachio cream and pour into a freezer cup. Freeze for 24 hours. Remove and blend in a high-powered blender until creamy.

    Return the pistachio ice cream to the freezer cup and press a spoonful of ice deep enough to reach the bottom. Add the kadayif and remaining pistachio cream, then mix gently.

    Simultaneously melt the chocolate over a double boiler. Roughly chop the pistachios. Fill the ice cream cups with scoops, drizzle with melted chocolate, and sprinkle with chopped pistachios.
