The Pistachio Energy Balls from Spoonsparrow are quick to make and will definitely replace unhealthy sweets.

Ingredients

  • 280 g pistachios
  • 400 g dried dates

Instructions

    Blend 200 g pistachios with dates in a food processor or blender until creamy.

  2. 2.

    Roast the remaining pistachios in a dry pan over medium heat for 2–3 minutes, then remove and roughly chop.

  3. 3.

    Form 50 energy balls from the dough, roll them in the roasted pistachios, and press to adhere. Store in an airtight container in the refrigerator until serving.
