Baked Watermelon Cubes with Cheese

Spoonsparrow baked watermelon cubes with cheese are a delicious, spicy‑fruit snack for summer.

Ingredients

  • 1 watermelon
  • 250 g Scamorza (smoked mozzarella)
  • 60 g pistachio nuts (4 tbsp)
  • 4 sprigs thyme
  • Salt
  • Pepper

Instructions

    Cut the watermelon in half and slice into 1 cm thick rounds, then cut 12 triangles from each round; use the remaining pieces elsewhere.

    Place the watermelon cubes on a baking sheet lined with parchment paper. Slice the Scamorza into rounds and place them on top of the watermelon pieces. Sprinkle chopped pistachios over the cheese. Bake under a hot grill in the oven for 6–8 minutes until golden brown.

    Wash the thyme, pat dry, remove leaves from stems, and sprinkle over the watermelon cubes just before they finish cooking. Season the baked watermelon cubes with salt and pepper before serving.
