Pistachio Bread

Ingredients
- 350 g wheat flour
- 150 g spelt flour
- 42 g fresh yeast (1 cube)
- 1 tsp sugar
- 2 tsp salt
- a pinch ground cardamom
- 70 g pistachios (coarsely chopped)
- 30 g pumpkin seeds (coarsely chopped)
- 2 tbsp walnut oil
- flour (for the work surface)
- oil (for the loaf pan)
Instructions

Whisk the yeast with 250 ml lukewarm water and sugar until smooth. In a bowl, combine flour, salt, cardamom, and oil; pour in the dissolved yeast and knead with an electric hand mixer’s dough hooks into a smooth dough, adding more flour or water if needed. Finally fold in the nuts. Cover and let rise in a warm place for about 45 minutes.

Oil the loaf pan. Knead the dough on a floured surface, shape it into a long loaf, and place it in the pan. Cover and allow to rise again for 30 minutes. Preheat the oven to 200°C. Place a heatproof bowl of hot water at the bottom of the oven. Brush the top of the dough with water and bake in the middle rack for about 50-60 minutes. Remove from the oven, transfer to a plate, and brush with water again.
