Piquant Schnitzel Coated in Crispy Bread Crumbs

Ingredients

  • 1 old-fashioned pretzel
  • 4 pork schnitzels (about 150 g each)
  • Salt
  • Pepper (freshly ground)
  • 3 Tbsp sweet mustard
  • 4 tbsp clarified butter
  • 1 piece fresh horseradish (about 4 cm)
  • 2 Tbsp brown butter
  • 1 lemon

Instructions

    Grate the pretzel on a fine grater and spread the crumbs on a flat plate. Wash, pat dry, salt, pepper, and lightly coat each schnitzel with mustard.

    Coat the schnitzels in the pretzel crumbs, pressing them firmly onto the meat. Fry the schnitzels in hot clarified butter for about 4 minutes on each side until golden.

    Place the cooked schnitzels on a platter, grate fresh horseradish over them, drizzle with brown butter, and garnish with lemon wedges. Serve alongside roasted potatoes.
