Ingredients
- 4 thin veal cutlets (about 120-140 g each)
- 2 Eggs
- 4 tbsp flour
- 70 g breadcrumbs
- 4 tbsp clarified butter
- Salt
- ground pepper
- 600 g frozen French fries (for the baking sheet)
- 1 lemon

Flatten the meat evenly with a mallet.

Place flour and breadcrumbs on separate shallow plates. Beat the eggs in a deep dish.

Season the cutlets with salt and pepper, then dredge them first in flour, then in beaten eggs, and finally in breadcrumbs.

Heat 2 tbsp clarified butter in each of two pans and fry the cutlets on both sides for about 6 minutes until golden brown.

Finish the French fries according to package instructions on a baking sheet.
