Pineapple Salmon Salad

A refreshing pineapple salmon salad featuring fresh ingredients from the seafood category, brought to you by Spoonsparrow!
Ingredients
- 70 ml Thai sweet chili sauce for chicken ("Sweet Chili Chicken")
- 1 tbsp Rice vinegar
- 1 Red Onion
- 1 sprig dill
- a handful of coriander leaves
- 300 g fresh pineapple (flesh only)
- 400 g salmon fillet (skinless)

Whisk the chili sauce and vinegar together. Peel and finely dice the onion. Wash, dry, and chop the herbs. Dice the pineapple into small cubes and mix with the chili sauce, onion, and herbs; let sit for about 20 minutes.

Meanwhile wash the salmon and pat it dry with paper towels. Cut into small cubes and combine with the remaining ingredients just before serving.
